  • 1.5 lbs chicken breast, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced

  • 1 cup chicken broth
  • 3/4 cup sour cream
  • Salt and black pepper to taste

Instructions

  1. Season the chicken with salt and pepper. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Add chicken and sear until golden brown. Remove from skillet.
  2. In the same skillet, add remaining butter and sauté onions until translucent. Add garlic and mushrooms; cook until mushrooms are browned.
  3. Sprinkle flour over veggies; stir for a minute. Gradually pour in chicken broth while stirring to avoid lumps. Simmer until slightly thickened.
  4. Lower heat; stir in sour cream until smooth. Return chicken to skillet; simmer for an additional 2–3 minutes.
