  • 1 lb skinless, boneless salmon
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 cup diced carrots
  • 3 cups chicken or vegetable broth
  • 2 cups peeled and diced Yukon Gold potatoes
  • 1 cup heavy cream
  • 2 tbsp chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add onion, garlic, celery, and carrots; sauté for about 6–8 minutes until softened.
  2. Pour in the broth and add diced potatoes. Season with salt and pepper; bring to a boil then reduce to a simmer for about 12–15 minutes.
  3. Gently add salmon chunks; cook for another 5–7 minutes until the salmon flakes easily.
  4. Lower heat slightly and stir in heavy cream and fresh dill. Let simmer for an additional 2–3 minutes.
  5. Taste your chowder and adjust seasoning as needed before serving hot.
