  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple cider vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn.
  2. In a large bowl, combine the drained beans and corn with chopped cilantro, diced bell peppers, and red onion.
  3. In another bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple cider vinegar, fresh lime juice, and garlic powder.
  4. Pour the dressing over the bean mixture and gently stir until evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
