  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until soft (about 3–4 minutes).
  3. Stir in chopped spinach and cook until wilted (about 2–3 minutes). Season with garlic powder, salt, and pepper; remove from heat.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth.
  5. Fold in sautéed vegetables and shredded cheese.
  6. Grease a 9-inch pie dish and pour in the mixture evenly.
  7. Bake for 40–45 minutes, until golden brown on top and set in the center.
  8. Cool slightly before slicing and serve warm or at room temperature.
