  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil. Sauté diced onion and bell pepper for about 3–4 minutes until soft.
  3. Add chopped spinach; cook until wilted, about 2–3 minutes. Season with garlic powder, salt, and pepper. Remove from heat.
  4. In a large bowl, whisk eggs, milk, and cottage cheese until smooth; stir in Italian seasoning and adjust seasoning to taste.
  5. Fold in sautéed vegetables and shredded cheese until well combined.
  6. Grease a 9-inch pie dish; pour quiche mixture into the dish evenly.
  7. Bake for 40–45 minutes until golden on top and set in the center. Allow cooling for 5–10 minutes before slicing.
  8. Serve warm or at room temperature.
