  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  2. In another bowl, mix softened butter, brown sugar, and cinnamon until smooth. Spread over the crust.
  3. Beat cream cheese and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract and sour cream along with brown sugar and cinnamon until well combined.
  4. Pour half of the cheesecake filling over the cinnamon layer. Create swirls with remaining filling on top before adding more filling. Bake for about 55 minutes or until set but slightly jiggly.
  5. Cool completely before refrigerating for at least four hours. Prepare frosting by mixing softened cream cheese, butter, powdered sugar, vanilla extract, and milk if needed for consistency; spread over chilled cheesecake.
