  • Juice of 2 limes

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon olive oil (for chickpea mixture)
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • Juice of 1/2 lime
  • 2 tablespoons water (or more, to desired consistency)
  • 1/4 teaspoon salt (for avocado crema)
  • Optional toppings: shredded lettuce, sliced tomatoes, bell peppers

Instructions

  1. Preheat oven to 400°F (200°C). Cut cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
