  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. Prepare the avocado spread by mashing the avocado with lemon juice, salt, and pepper in a small bowl.
  2. Assemble the sandwich: Spread mayonnaise on one side of each slice of bread. Layer the mashed avocado on one slice, followed by shredded chicken and cheese. Top with the second slice, mayo side facing out.
  3. Toast the sandwich: In a skillet over medium heat, melt butter until bubbly. Grill the sandwich for about 3–4 minutes per side until golden brown and the cheese is melted.
  4. Serve hot, sliced in half.
