  • 1 cup finely diced apple (Honeycrisp or Gala recommended)
  • ½ cup natural almond butter (or peanut butter)
  • ⅓ cup maple syrup
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions

  1. Prepare an 8×8 inch baking pan by lining it with parchment paper.
  2. In a large mixing bowl, combine almond butter, maple syrup, vanilla extract, and salt. Mix until smooth.
  3. Stir in the oats, ground cinnamon, and diced apple until well combined.
  4. Transfer the mixture to the prepared pan and press down firmly into an even layer.
  5. Chill in the refrigerator for about 1–2 hours until set.
  6. Lift out using the parchment paper overhang and slice into squares.
