  • 4 medium-large tomatoes
  • 1 cup cooked rice
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Slice off the tops of the tomatoes and scoop out their insides. Sprinkle salt inside and let them drain upside down.
  2. In a bowl, mix the cooked rice, minced garlic, half the mozzarella, parmesan, olive oil, Italian seasoning, salt, and black pepper.
  3. Fill each tomato with the rice mixture without packing it too tightly. Top with remaining mozzarella and a drizzle of olive oil.
  4. Bake for 20–25 minutes until golden brown and bubbly. Let rest for five minutes before serving.
