  • 1 teaspoon onion powder

  • 2 cups cooked rice (white or brown)
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  2. Pour half of the buffalo sauce over the chicken and place on a lined baking sheet. Bake for 20-25 minutes until cooked through.
  3. Shred the chicken after resting for 5 minutes and toss with remaining buffalo sauce.
  4. Cook rice as per package instructions. Fluff when done.
  5. Assemble bowls with rice as the base, top with shredded chicken, celery, tomatoes, and avocado.
  6. Drizzle with dressing and garnish as desired.
