  • 1/3 cup milk (more as needed)
  • 1/2 cup sour cream
  • 3/4 cup butter
  • 2 cloves garlic (minced)
  • 1 & 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 2 tablespoons fresh parsley (or 2 teaspoons dried)
  • 1/3 cup grated Parmesan cheese
  • Horseradish sauce (to taste)

Instructions

  1. In a large pot of boiling water, add chopped red potatoes and simmer for about 20-35 minutes until fork-tender.
  2. Drain the cooked potatoes and return them to the pot. Add warm milk, sour cream, garlic, salt, pepper, parsley, and Parmesan cheese. Mash until smooth.
  3. In a separate pan over medium heat, melt butter while stirring until it turns golden brown and fragrant. Pour into the potato mixture.
