- ¾ cup peach preserves
- 2 tablespoons extra virgin olive oil
- 2 teaspoons soy sauce
- 2 teaspoons apple cider vinegar
- 4 salmon fillets (about 1½ pounds)
- 2 medium peaches (thinly sliced)
- In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes.
- Marinate salmon fillets in half of the marinade for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Sear marinated salmon skin side up in an oven-safe skillet over medium-high heat for 2-3 minutes.
- Flip fillets skin side down and add sliced peaches around them.
- Pour the reserved marinade over salmon and peaches.
- Bake for 12-15 minutes until the internal temperature reaches 145°F (63°C).
- Serve immediately garnished with fresh parsley.
