  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (thinly sliced)

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes.
  2. Marinate salmon fillets in half of the marinade for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Sear marinated salmon skin side up in an oven-safe skillet over medium-high heat for 2-3 minutes.
  5. Flip fillets skin side down and add sliced peaches around them.
  6. Pour the reserved marinade over salmon and peaches.
  7. Bake for 12-15 minutes until the internal temperature reaches 145°F (63°C).
  8. Serve immediately garnished with fresh parsley.
