Ingredients

Scale
  • 1.5 lbs beef tenderloin
  • Salt and pepper to taste
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp fresh thyme (or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the beef tenderloin with salt, pepper, and Dijon mustard on all sides.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the beef until golden brown (about 3-4 minutes per side).
  4. Transfer the skillet to the oven and roast for about 15-20 minutes until the internal temperature reaches 145°F (63°C).
  5. Remove the beef from the oven and let it rest. In the same skillet, sauté minced garlic until fragrant, then add chicken broth and scrape up browned bits. Stir in heavy cream and remaining Dijon mustard; simmer until thickened.
  6. Slice rested beef into medallions and serve drizzled with sauce.
