  • 2 large yellow onions (for optional caramelization)
  • 6 strips turkey bacon (or chicken sausage)
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Caramelize the onions: Slice onions and cook in butter and olive oil over medium heat until golden brown (about 40-50 minutes).
  2. Cook the turkey bacon: Cut into thirds and cook in a skillet over low heat until crispy. Set aside and reserve drippings.
  3. Make the cheese sauce: In the reserved drippings, whisk flour to make a roux, then gradually add heavy cream and milk until thickened. Stir in mustard powder, thyme, garlic powder, and hot sauce.
  4. Combine everything: Cook pasta shells al dente according to package instructions. Stir cheeses into the sauce until melted, then mix in caramelized onions and drained pasta shells.
