  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper. Mix until well blended.
  2. Lay an eggroll wrapper flat on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal with water.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Carefully fry eggrolls seam-side down in batches for about 3-4 minutes until golden brown.
  5. Remove from oil and drain on paper towels.
