  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat the oven to 200°C. Toss butternut squash with olive oil, salt, and pepper; spread on a baking sheet. Roast for 15-20 minutes until tender.
  2. On another sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast alongside squash until caramelized.
  3. Cook bow tie pasta in salted boiling water until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced turkey sausage until browned. Remove and set aside.
  5. In the same skillet, cook garlic in butter until fragrant. Add cooked pasta with seasoning and mix well.
  6. Combine roasted veggies and sausage into the skillet; toss gently to coat everything in garlic butter sauce.
