- 3 cups butternut squash, peeled, seeded, cubed
- 340 g Brussels sprouts, trimmed and halved
- 225 g bow tie pasta
- 340 g cooked turkey sausage
- 5 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- ¼ teaspoon smoked paprika
- Fresh thyme leaves
- Preheat the oven to 200°C. Toss butternut squash with olive oil, salt, and pepper; spread on a baking sheet. Roast for 15-20 minutes until tender.
- On another sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast alongside squash until caramelized.
- Cook bow tie pasta in salted boiling water until al dente; reserve some pasta water before draining.
- In a skillet over medium heat, sauté sliced turkey sausage until browned. Remove and set aside.
- In the same skillet, cook garlic in butter until fragrant. Add cooked pasta with seasoning and mix well.
- Combine roasted veggies and sausage into the skillet; toss gently to coat everything in garlic butter sauce.
