  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and grease a 9” square baking dish. Line it with parchment paper for easy removal.
  2. In a sauté pan, boil the fresh apple cider until reduced by half (about five minutes), then whisk in the diced butter until melted.
  3. In a bowl, combine eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly whisk in the boiled cider mixture until well combined.
  5. Gently fold in the flour until just mixed—don’t overmix.
  6. Pour the batter into the prepared dish and bake for about 22 to 25 minutes or until golden brown.
  7. Let cool for five minutes before brushing melted butter on top and sprinkling with cinnamon sugar.
