  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink. Add onions and garlic; cook until softened. Drain excess fat.
  2. Prepare the veggies by dicing the potatoes and slicing the carrots.
  3. In a greased baking dish, layer the beef mixture on the bottom followed by potatoes, carrots, and green beans.
  4. Whisk together tomato paste, beef broth, smoked paprika, thyme, salt, and pepper; pour over the layered vegetables.
  5. Cover with foil and bake at 375°F for about 45 minutes. Remove foil and bake for an additional 15 minutes until veggies are fork-tender.
