  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Wash and cut the potatoes if needed. Boil in salted water until fork-tender (15-20 minutes).
