  • 1 cup blanched almond flour
  • ½ cup light brown sugar (packed)
  • ½ cup salted butter (softened)
  • 1 large egg
  • 1 teaspoon pure almond extract
  • ¼ cup sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine almond flour, brown sugar, butter, flour, egg, and almond extract using a hand mixer until just blended.
  3. Roll out thawed puff pastry into an 11×11 square and cut into twenty-four 2×2 inch squares. Press each square into mini muffin pan cavities.
  4. Fill each pastry cup with about one tablespoon of the almond filling and top with sliced almonds.
  5. Bake for 10-15 minutes until golden brown. Let cool slightly before dusting with powdered sugar.
